Earlier this week I was feeling poorly (see previous post). When I finally started to feel hungry again, I wanted eggs benedict (and ginger beer). I don't recall ever having eggs benedict before, so this was a surprising craving. It probably started from the side gadget on my blog that tells you what "day" it is (ie eggs benedict day several days previous). So, I stopped at the store for some english muffins and eggs and going off of Pioneer Woman's simple recipe tried it. Oh. My. GOODness.
Mine didn't look as pretty as this picture, and I left off the ham, but I proceeded to eat an embarrassing number of poached eggs. (The sauce uses 3 egg yolks and so what to do with the whites afterwards? well poach them and eat them too!). If one hasn't eaten much the past couple of days, I don't recommend this as a convalescent recipe, as I felt a little queasy after the egg fest (but not enough to put me off). Hollandais sause is butter: lots and lots of butter with some lemon juice to make it nice. Once my carefully hoarded batch is gone I'll probably forgo making it again for awhile, in the meantime I've been reintroduced to the poached egg. I haven't figured out how to make it stay in one nice lump (swirling the water does seem to help), but I love it with a splash of vinegar in the water. I ran out of english muffins and am having mine on toast and its still great! Still want some ginger beer.
Garden update: with the help of Melanie, Cathy, Kate, Mamarine, Alec I am ahead of my spring planting. All my greens, peas, onions, carrots, and potatoes are in and growing. I only have two long beds in back and the bubba bed on the side to turnover. Just waiting for last frost day to get my summer plants in. Oh and a new bed to start- of course. On the to-do list for this week is to weed the corner, tree, window, and stump flower gardens and if I'm brave enough, figure out how to manage my raspberries and blackberries.

You make it sound so good. It makes me hungry and I don't want to be hungry. Buttery sauce is the last thing we need at this house.
You are really going great on the garden. Wish I was that far along.
I saw that up on the Pioneer Woman as well but I've been too lazy to try it. Like Mom said, you make it sound so good!

Yes, i think I need to try out the eggs benedict. They look and sound delicious!
I'm impressed, as always, with your gardening! Maybe I'll get mine started next year (not the first year I've said this)
